Yasubei Kimura opened the first bakery
in Japan named "Bun-Ei-Do" near the current
Shinbashi Station in 1869. Later, he changed
its name to "Kimuraya" and eventually moved
to Renga-gai in Ginza in 1874. Eizaburou
invented a new type of bun, a sakadane bean
paste bun, after years of research on the
fermentation of rice and malt. The bean paste
bun was a great harmony of Western bread
and Japanese red bean paste. It became popular
all over Tokyo and sold very well every day.
